ITC’s Sunrise Spices has launched “Xipa Bisari: A Back to Roots Series,” a culinary documentary celebrating Assam’s traditional cuisine. The 10-episode series was unveiled at Guwahati’s Chandmari Bihu Xonmilon pandal with Mr. Rahul Das, Chief of Assam’s Directorate of Cultural Affairs, in attendance.
Hosted by renowned Assamese chef Atul Lahkar and supported by Assam’s Cultural Ministry, the series documents Chef Lahkar’s journey through Assam’s villages and markets as he rediscovers disappearing recipes and cooking techniques. The show highlights local culinary knowledge keepers, particularly elderly women who have preserved traditions through generations.
“‘Xipa Bisari’ honors Assam’s food heritage, empowers local communities, and inspires the next generation to cherish their culinary roots,” said Piyush Mishra, Business Head of Spices at ITC Ltd. Each episode features Chef Lahkar reinterpreting traditional recipes using Sunrise Spices’ authentic blends, showcasing the distinctive flavors of Assamese cuisine.
